is the guardian of ancient history, visible sites and reminders of
long gone civilizations that span over 5,000 years. From the
Ozieri Culture to the Roman Empire, the Giudicato period to the Kingdom
of Sardinia. |

between these, there came others who left noticeable
reminders on the land, language, culture, products and everyday way of
life. Sardinian
Carasau bread is one of the oldest bread types, with different
variations in other Mediterranean coastal areas. This bread form may
have originated with Sardinia's inhabitants pastoral way of life, a
families livelihood very much depending on the movement of the flock to
different pastoral grazing lands, often for periods that extended over a
month. A necessity to creating a daily bread which could last this time
and retain its freshness for extended periods, could have been part of a
families survival.

households to prepare and produce the provisions for extended
periods. A laborious task, the preparation of the dough, the double
cooking process, with the end result being an everyday bread that
complimented and accompanied each daily meal and was the perfect
ingredient for meals away from home.

in Sardinia has brought new life with visitors introduction to Pane
Carasau, served in most restaurants and part of culinary tours of the
island, which are helping to create a demand for the product outside the
island. |

technology with traditional recipes moving Pane Carasau towards the
markets of the 21st Century. |
