Sardinian Carasau bread is one of the oldest bread types, with different variations in other Mediterranean coastal areas. This bread form may have originated with Sardinia's inhabitants pastoral way of life, a families livelihood very much depending on the movement of the flock to different pastoral grazing lands, often for periods that extended over a month. A necessity to creating a daily bread which could last this time and retain its freshness for extended periods, could have been part of a families survival.
